Ingredients
  

  • 2 cups old-fashioned rolled oats
  • 1 cup all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup unsalted butter melted
  • ½ cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1½ cups finely chopped apples
  • ¼ cup chopped walnuts or pecans optional

Method
 

  1. Preheat the oven: Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving some paper over the sides for easy removal.
  2. Prepare the dry ingredients: In a large bowl, combine the rolled oats, flour, cinnamon, baking powder, and salt. Stir until evenly combined.
  3. Mix the wet ingredients: In another bowl, whisk together the melted butter, brown sugar, egg, and vanilla extract until smooth.
  4. Combine the mixtures: Pour the wet ingredients into the dry ingredients. Stir gently until the mixture is just combined.
  5. Add the apples: Fold in the chopped apples. If using walnuts or pecans, fold them in at the same time.
  6. Fill the pan: Transfer the mixture to the prepared baking pan. Spread it evenly and gently press it down with a spatula.
  7. Bake: Bake for 30–35 minutes, or until the edges are lightly golden and the center is set.
  8. Cool: Remove the pan from the oven and allow the bars to cool completely before cutting. This helps them firm up and makes slicing easier.
  9. Slice and serve: Lift the bars from the pan using the parchment paper. Cut into 12 squares or rectangles and serve.

Notes

  • Use firm apples such as Honeycrisp, Gala, Fuji, or Granny Smith.
  • For a sweeter bar, add a little extra brown sugar.
  • Chopped walnuts or pecans add a nice crunch.
  • Allow the bars to cool completely before slicing so they hold together better.
  • Store leftovers in an airtight container.
