Ingredients

  • 1 8-ounce wheel of Brie
  • ½ cup dried cranberries
  • ½ cup chopped pecans
  • 2 tablespoons pure maple syrup
  • 1 tablespoon brown sugar
  • ¼ teaspoon ground cinnamon
  • 1 teaspoon fresh rosemary finely chopped, optional
  • Crackers toasted baguette, apple slices, or pear slices for serving

Method

  1. Preheat the oven to 350°F (175°C) and line a small baking sheet or baking dish with parchment paper.
  2. Place the Brie wheel in the center of the prepared pan. Leave the rind on and optionally score the top lightly.
  3. In a small bowl, combine the dried cranberries, chopped pecans, brown sugar, cinnamon, and maple syrup.
  4. Spoon the cranberry-pecan mixture evenly over the top of the Brie.
  5. Sprinkle with fresh rosemary if desired.
  6. Bake for 15–20 minutes, or until the Brie is soft and creamy in the center.
  7. Remove from the oven and let rest for about 5 minutes.
  8. Serve warm with crackers, toasted bread, crostini, apple slices, or pear slices.

Notes

  • Keep the Brie wheel intact while baking so the melted cheese stays contained.
  • Do not overbake; the Brie should be soft and creamy rather than completely melted.
  • Toast the pecans beforehand for an even deeper nutty flavor.
  • Honey can be substituted for maple syrup.
  • Walnuts can be substituted for pecans.
  • For a citrus twist, add a little fresh orange zest to the topping.
