Method
- Add the cherries, granulated sugar, cornstarch, lemon juice, vanilla extract, and water to a small saucepan.
- Cook over medium heat for 5–7 minutes, stirring frequently, until the cherries soften and the mixture thickens to a jam-like consistency.
- Remove the cherry filling from the heat and allow it to cool completely.
- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Lightly flour a work surface and unfold the thawed puff pastry. Gently roll it smooth if needed.
- Cut the puff pastry into approximately 4–5-inch squares.
- Place a spoonful of cooled cherry filling in the center of each pastry square, leaving space around the edges.
- Fold each pastry square diagonally to form a triangle.
- Press the edges together firmly, then crimp them with a fork to seal.
- Transfer the turnovers to the prepared baking sheet.
- Whisk the egg with 1 tablespoon of water. Brush the egg wash over each turnover.
- Sprinkle with coarse sugar if desired and cut a couple of small vents in the top of each turnover.
- Bake for 18–22 minutes, or until puffed and golden brown.
- Remove from the oven and allow the turnovers to cool for several minutes.
- Whisk together the powdered sugar, milk, and vanilla extract to make the glaze.
- Drizzle the glaze over the cooled cherry turnovers and serve.
Notes
- Allow the cherry filling to cool completely before adding it to the puff pastry.
- Do not overfill the pastry because the cherry filling may leak during baking.
- Keep the puff pastry cold for the flakiest results.
- If using frozen cherries, cook the filling until it becomes thick enough to spoon onto the pastry.
- Canned cherry pie filling can be used as a shortcut.
- For best texture, reheat leftovers in a 350°F (175°C) oven for 5–8 minutes.
