Method
- Cook the pasta in salted water according to the package directions until al dente. Reserve about 1 cup of pasta water, then drain.
- Season the chicken with salt, pepper, paprika, and Italian seasoning.
- Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook until golden brown and cooked through. Remove and set aside.
- Add butter to the skillet and cook the sliced mushrooms until tender and golden.
- Add minced garlic and cook for about 30 seconds until fragrant.
- Reduce the heat and pour in the heavy cream. Stir and gently simmer for several minutes.
- Add Parmesan cheese and stir until melted and the sauce becomes creamy.
- Return the cooked chicken to the skillet and stir.
- Add the cooked pasta and toss until well coated.
- Add reserved pasta water a little at a time if the sauce needs thinning.
- Garnish with fresh parsley and additional Parmesan.
- Serve immediately while hot.
Notes
For the best flavor, allow the mushrooms to brown well before adding the cream. Freshly grated Parmesan also helps create a smoother sauce. If the sauce becomes too thick, loosen it with a small amount of reserved pasta water.
