Creamy Chicken and Mushroom Pasta Recipe

This pasta is also a wonderful option when you want to make a restaurant-style dinner at home. Serve it with a simple green salad, roasted vegetables, or warm garlic bread for a complete meal.

Ingredients
  

  • 12 ounces pasta
  • 1 pound boneless skinless chicken breasts, cut into bite-sized pieces
  • 8 ounces mushrooms sliced
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 3 cloves garlic minced
  • 1 cup heavy cream
  • ¾ cup freshly grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • ½ teaspoon paprika
  • Salt to taste
  • Black pepper to taste
  • 2 tablespoons fresh parsley chopped
  • ½ –1 cup reserved pasta water as needed

Method
 

  1. Cook the pasta in salted water according to the package directions until al dente. Reserve about 1 cup of pasta water, then drain.
  2. Season the chicken with salt, pepper, paprika, and Italian seasoning.
  3. Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook until golden brown and cooked through. Remove and set aside.
  4. Add butter to the skillet and cook the sliced mushrooms until tender and golden.
  5. Add minced garlic and cook for about 30 seconds until fragrant.
  6. Reduce the heat and pour in the heavy cream. Stir and gently simmer for several minutes.
  7. Add Parmesan cheese and stir until melted and the sauce becomes creamy.
  8. Return the cooked chicken to the skillet and stir.
  9. Add the cooked pasta and toss until well coated.
  10. Add reserved pasta water a little at a time if the sauce needs thinning.
  11. Garnish with fresh parsley and additional Parmesan.
  12. Serve immediately while hot.

Notes

For the best flavor, allow the mushrooms to brown well before adding the cream. Freshly grated Parmesan also helps create a smoother sauce. If the sauce becomes too thick, loosen it with a small amount of reserved pasta water.
