Ingredients
  

  • 2 pounds beef chuck roast cut into 1-inch pieces
  • 1/4 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 medium yellow onion chopped
  • 3 cloves garlic minced
  • 4 medium carrots peeled and sliced
  • 1 1/2 pounds potatoes peeled and cut into chunks
  • 2 tablespoons tomato paste
  • 4 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 2 bay leaves
  • 1 cup frozen peas
  • 2 tablespoons fresh parsley chopped

Method
 

  1. Pat the beef dry and toss it with flour, salt, and black pepper.
  2. Heat olive oil in a skillet over medium-high heat and brown the beef in batches.
  3. Transfer the browned beef to the crockpot.
  4. Add the onion, garlic, carrots, and potatoes.
  5. Whisk together the beef broth, tomato paste, and Worcestershire sauce. Pour into the crockpot.
  6. Add the thyme, rosemary, and bay leaves.
  7. Cover and cook on LOW for 7–8 hours or HIGH for 4–5 hours, until the beef is tender.
  8. Stir in the frozen peas during the final 15–20 minutes.
  9. Remove the bay leaves and taste for seasoning.
  10. Garnish with fresh parsley and serve warm.
