Crockpot Pot Roast Recipe

There’s nothing quite like coming home to the comforting aroma of a slow-cooked pot roast.

Ingredients
  

  • 3 –4 pounds chuck roast
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 large yellow onion sliced
  • 4 cloves garlic minced
  • 4 large carrots peeled and cut into chunks
  • 1 1/2 pounds baby potatoes halved
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 2 tablespoons tomato paste
  • 2 bay leaves
  • 2 tablespoons cornstarch
  • 3 tablespoons cold water

Method
 

  1. Pat the chuck roast dry and season all sides with salt, pepper, garlic powder, onion powder, thyme, and rosemary.
  2. Heat olive oil in a skillet over medium-high heat and sear the roast for 3–4 minutes per side.
  3. Add the onion, carrots, potatoes, and garlic to the bottom of the crockpot.
  4. Place the seared roast on top of the vegetables.
  5. Add the beef broth, Worcestershire sauce, tomato paste, and bay leaves.
  6. Cover and cook on LOW for 8–9 hours or HIGH for 4–5 hours, until the beef is fork-tender.
  7. Transfer the roast and vegetables to a serving platter.
  8. Remove the bay leaves.
  9. Mix cornstarch and cold water until smooth. Stir into the cooking liquid and simmer until thickened.
  10. Slice or shred the roast and serve with the vegetables and gravy.

Notes

  • Chuck roast works particularly well for slow cooking.
  • Searing the beef is optional but adds extra flavor.
  • Cut the vegetables into fairly large pieces so they hold their shape during the long cooking time.
  • If the gravy is too thin, add a little more cornstarch slurry.
  • If the gravy becomes too thick, thin it with a small amount of beef broth.
  • Leftover pot roast makes an excellent filling for sandwiches or bowls.
