Ingredients

  • 3 ripe bananas mashed
  • ½ cup melted unsalted butter
  • ¾ cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt

Method

  1. Preheat the oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line it with parchment paper.
  2. Mash the ripe bananas in a large mixing bowl.
  3. Add melted butter, sugar, egg, and vanilla extract. Stir until well combined.
  4. Add flour, baking soda, cinnamon, and salt.
  5. Gently mix until just combined. Do not overmix.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
  8. Cool in the pan for 10–15 minutes, then transfer to a wire rack to cool before slicing.
  9. Serve warm or at room temperature.

Notes

For the best flavor and texture, use very ripe bananas with plenty of brown spots. Chocolate chips, walnuts, pecans, or extra cinnamon can be added to the batter for an easy variation.
