Easy Beef and Vegetable Stew Recipe

Ingredients
  

  • 2 lb beef chuck cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 1 medium onion chopped
  • 3 cloves garlic minced
  • 2 tablespoons all-purpose flour
  • 2 tablespoons tomato paste
  • 4 cups beef broth
  • 4 medium carrots sliced
  • 4 medium potatoes peeled and cubed
  • 2 celery stalks chopped
  • 1 teaspoon dried thyme
  • ½ teaspoon dried rosemary
  • 1 teaspoon salt or to taste
  • ½ teaspoon black pepper
  • 1 cup frozen peas optional
  • Fresh parsley for garnish optional

Method
 

  1. Pat the beef dry and season with salt and black pepper. Lightly coat with flour.
  2. Heat olive oil in a large pot or Dutch oven over medium-high heat.
  3. Brown the beef in batches, then transfer it to a plate.
  4. Add the onion and cook until softened. Add garlic and cook briefly.
  5. Stir in tomato paste and cook for about 1 minute.
  6. Return the beef to the pot and add the beef broth.
  7. Add carrots, potatoes, celery, thyme, and rosemary.
  8. Bring to a gentle boil, then reduce heat to low.
  9. Cover partially and simmer for 1½–2 hours, or until the beef is tender.
  10. Add peas during the final few minutes if using.
  11. Taste and adjust the seasoning.
  12. Serve warm with bread, rice, or your favorite side.
