Ingredients
  

  • 1 whole chicken approximately 4–5 pounds
  • ½ cup unsalted butter softened
  • 5 –6 cloves garlic finely minced
  • 1 tablespoon fresh rosemary chopped
  • 1 tablespoon fresh thyme leaves
  • 2 tablespoons fresh parsley chopped
  • 1 lemon halved
  • 1 tablespoon olive oil
  • teaspoons salt
  • 1 teaspoon black pepper
  • 3 –4 sprigs fresh rosemary
  • 3 –4 sprigs fresh thyme

Method
 

  1. Preheat the oven: Preheat your oven to 425°F (220°C).
  2. Prepare the chicken: Remove the chicken from its packaging and pat it completely dry with paper towels. Place it breast-side up in a roasting pan or large oven-safe skillet.
  3. Make the herb butter: In a small bowl, combine the softened butter, minced garlic, chopped rosemary, thyme, parsley, salt, and black pepper. Mix until evenly combined.
  4. Season under the skin: Carefully loosen the skin over the chicken breasts with your fingers. Spread some of the garlic herb butter underneath the skin, then spread the remaining butter over the outside of the chicken.
  5. Add the lemon and herbs: Place the lemon halves inside the chicken cavity along with the fresh rosemary and thyme sprigs.
  6. Prepare for roasting: Drizzle the olive oil over the chicken and season lightly with additional salt and pepper if desired.
  7. Roast: Place the chicken in the preheated oven and roast until the skin is golden brown and the thickest part of the chicken reaches 165°F (74°C) when checked with an instant-read thermometer.
  8. Baste: If desired, carefully spoon some of the pan juices over the chicken once or twice during roasting.
  9. Rest: Remove the chicken from the oven and let it rest for 15–20 minutes before carving.
  10. Carve and serve: Carve the chicken and serve warm with roasted potatoes, vegetables, mashed potatoes, salad, or your favorite side dishes.
