Ingredients
Method
- Combine flour, sugar, and salt. Cut in cold butter until crumbly, then add ice water gradually until a dough forms.
- Divide the dough into two disks, wrap, and refrigerate for 30–60 minutes.
- Toss sliced apples with granulated sugar, brown sugar, flour, lemon juice, cinnamon, nutmeg, and salt.
- Roll out one dough disk and fit it into a 9-inch pie dish.
- Add the apple filling and scatter the butter pieces over the top.
- Roll out the remaining dough, cover the filling, and seal and crimp the edges. Cut vents into the top crust.
- Brush with egg wash and sprinkle with coarse sugar if desired.
- Bake at 425°F (220°C) for 20 minutes, then reduce the temperature to 375°F (190°C) and bake for another 35–45 minutes.
- Cool for 2–3 hours before slicing and serving.
Notes
Use firm apples for the best texture. Cover the crust edges with foil if they brown too quickly, and allow the pie to cool completely so the filling can set.
