One-Pan Roasted Sausage and Vegetables Recipe

A simple and flavorful one-pan dinner made with roasted sausage, potatoes, bell peppers, zucchini, and onions. Everything is seasoned with garlic, paprika, and Italian herbs, then roasted until tender and golden.

Ingredients
  

  • 1 pound smoked sausage sliced into rounds
  • 1 ½ pounds baby potatoes halved or quartered
  • 1 red bell pepper chopped
  • 1 yellow bell pepper chopped
  • 1 medium zucchini sliced
  • 1 medium red onion cut into chunks
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon dried parsley
  • Optional: grated Parmesan for serving
  • Optional: fresh parsley for garnish

Method
 

  1. Preheat the oven: Preheat your oven to 425°F (220°C). Line a large rimmed baking sheet with parchment paper or lightly grease it.
  2. Prepare the potatoes: Wash and cut the potatoes into small, evenly sized pieces. Add them to a large bowl and toss with olive oil, garlic powder, paprika, salt, and black pepper.
  3. Add the vegetables: Add the chopped bell peppers, zucchini, and red onion. Drizzle with the remaining olive oil and sprinkle with Italian seasoning. Toss until everything is evenly coated.
  4. Add the sausage: Slice the sausage into bite-sized rounds and add it to the bowl. Gently toss everything together.
  5. Arrange on the baking sheet: Spread the sausage and vegetables evenly across the baking sheet. Keep everything in a single layer so the ingredients can roast properly.
  6. Roast: Place the pan in the oven and roast for 30–40 minutes. Toss everything halfway through cooking.
  7. Check for doneness: The potatoes should be fork-tender, the vegetables should have browned edges, and the sausage should be heated through. If using raw sausage, make sure it reaches the appropriate safe internal temperature.
  8. Garnish and serve: Remove from the oven and let it cool for a few minutes. Sprinkle with dried or fresh parsley and Parmesan if desired. Serve warm.

Notes

  • Cut the potatoes into smaller pieces so they cook at the same rate as the other ingredients.
  • Avoid overcrowding the baking sheet because this can cause the vegetables to steam instead of roast.
  • You can substitute sweet potatoes, broccoli, mushrooms, carrots, or Brussels sprouts for some of the vegetables.
  • Chicken sausage, turkey sausage, smoked sausage, or Italian-style sausage can be used.
  • For extra flavor, add red pepper flakes, fresh garlic, or your favorite herb seasoning.
