These easy no-bake pumpkin spice energy bites are made with rolled oats, pumpkin puree, nut butter, maple syrup, and warm pumpkin pie spice. They’re a simple fall-inspired snack that comes together quickly and can be stored in the refrigerator for easy snacking.

Ingredients
  

  • 1 cup rolled oats
  • 1/2 cup pumpkin puree
  • 1/2 cup creamy peanut butter or almond butter
  • 1/4 cup maple syrup
  • 1 teaspoon pumpkin pie spice
  • 1/4 cup mini chocolate chips optional
  • 1/4 cup finely chopped pecans optional

Method
 

  1. Combine the wet ingredients: Add the pumpkin puree, nut butter, and maple syrup to a medium mixing bowl. Stir until smooth and well combined.
  2. Add the dry ingredients: Add the rolled oats and pumpkin pie spice to the bowl. Stir thoroughly until the oats are evenly coated and the mixture becomes thick.
  3. Add optional ingredients: If using, stir in the mini chocolate chips and chopped pecans until evenly distributed.
  4. Chill the mixture: Cover the bowl and refrigerate for about 20–30 minutes. Chilling helps the oats absorb moisture and makes the mixture easier to shape.
  5. Form the energy bites: Scoop out small portions of the chilled mixture and roll them between your hands to form round bites. Aim for approximately 12 evenly sized bites.
  6. Chill and serve: Place the finished energy bites in an airtight container and refrigerate until firm. Serve chilled or slightly softened.

Notes

  • Use plain pumpkin puree rather than pumpkin pie filling.
  • If the mixture is too sticky, add a little more rolled oats.
  • If the mixture is too dry, add a small amount of pumpkin puree or nut butter.
  • Chilling the mixture before rolling makes it easier to handle.
  • Peanut butter can be replaced with almond butter or another suitable nut or seed butter.
  • Store the finished energy bites in an airtight container in the refrigerator.
  • For longer storage, freeze the bites in a freezer-safe container and thaw them in the refrigerator before serving.
