Ingredients

  • 8 cups popped popcorn
  • 4 tablespoons unsalted butter
  • 1/3 cup brown sugar
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt

Method

  1. Pop the popcorn and place it in a large mixing bowl. Remove any unpopped kernels.
  2. Melt the butter in a small saucepan over low heat.
  3. Add the brown sugar, pumpkin pie spice, and salt. Stir until the sugar begins to dissolve and the mixture is well combined.
  4. Remove the saucepan from the heat and stir in the vanilla extract.
  5. Slowly drizzle the warm pumpkin spice mixture over the popcorn while gently tossing to coat it evenly.
  6. Spread the coated popcorn onto a parchment-lined baking sheet in an even layer.
  7. Allow the popcorn to cool completely so the coating can set and become crunchy.
  8. Break apart any large clusters and serve immediately or store in an airtight container.

Notes

  • Use freshly popped popcorn for the best texture.
  • Adjust the pumpkin pie spice according to your preferred flavor.
  • For extra crunch, add chopped pecans after coating the popcorn.
  • For a sweeter version, drizzle cooled popcorn with melted white chocolate.
  • Store completely cooled popcorn in an airtight container at room temperature.
