Ingredients
  

For the Crostini
  • 1 baguette
  • 2 tablespoons olive oil
  • 1 garlic clove optional
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
For the Sweet Potatoes
  • 2 medium sweet potatoes
  • 1 tablespoon olive oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon dried thyme
  • ½ teaspoon smoked paprika
For Assembly
  • 6 ounces goat cheese softened
  • 2 tablespoons honey
  • 1 tablespoon fresh thyme leaves
  • ¼ cup chopped pecans or walnuts optional
  • Fresh parsley or thyme for garnish

Method
 

  1. Preheat the oven to 425°F (220°C).
  2. Peel and cut the sweet potatoes into small cubes.
  3. Toss the sweet potatoes with olive oil, salt, black pepper, dried thyme, and smoked paprika.
  4. Spread the sweet potatoes on a baking sheet and roast for 20–25 minutes, turning halfway through, until tender and lightly browned.
  5. Slice the baguette diagonally into ½-inch slices and arrange on a baking sheet.
  6. Brush the baguette slices lightly with olive oil.
  7. Toast for 6–10 minutes, turning once if needed, until crisp and golden.
  8. Spread softened goat cheese over each toasted baguette slice.
  9. Top with roasted sweet potato pieces.
  10. Drizzle lightly with honey.
  11. Sprinkle with chopped nuts and fresh thyme or parsley.
  12. Serve immediately while the crostini are crisp.
